There’s a strange thing happening in the restaurant world right now.

People are talking about food constantly…while understanding less and less about what actually goes into making it.


We thought this would be the perfect time to bring back our blog which we are calling Behind The Slicer. This gives us the opportunity to talk about how we see food and share it with our community.


Everyone sees the final sandwich. Very few people see the work behind it.


The labor...The rising beef prices...The shrink from a brisket after hours of cooking...The cost of quality ingredients...The difference between house-made food and something pulled from a plastic bag.


Years ago, Celebrity Delly used to have a section like this on our old website. A place where we could talk directly to our guests and friends about food, deli culture, restaurants, trends, ingredients, and the things happening behind the counter that most guests never really get to see.


Somewhere along the way, the internet became louder, faster, and more polished. Everybody started chasing algorithms. Restaurants became content factories for social media. Menus got smaller. Corners got cut. Food photography started looking better than the actual food. While some of these trends are apart of our industry today, the ones that leave the guest craving something more, shouldn't.


But something interesting happened recently.


The RAMMY Awards nomination reignited something in us.


Not just pride but a shift in our perspective.


It reminded us that people still care about restaurants with identity. Places with history. Places with opinions. Places that stand for something.


Celebrity Delly has been here since 1975. That means we’ve lived through decades of changing food trends, changing customer expectations, changing economics, and changing restaurant culture. We’ve watched sandwiches shrink while prices climbed. We’ve watched convenience replace craftsmanship in a lot of places. We’ve watched the definition of “deli” slowly blur over time.


And while something these factors are the nature of the beast, we think those conversations are worth having.


So this blog is coming back for a reason.


Not as corporate marketing. Not as clickbait. Not as “Top 5 Summer Sandwiches!!!”


This is going to be a real conversation about food.


About why quality costs what it costs. About what makes a real Jewish deli different. About cheesesteaks, bread, soup, brunch, comfort food, food trends, restaurant culture, hospitality, and the strange emotional relationship people have with meals.


Some posts will be serious. Some will be funny. Some will probably make people hungry at 1:14am while standing in front of their refrigerator like a confused raccoon.


Good...That’s kind of the point.


Because food is not just fuel. It’s memory. It’s identity. It’s culture. It’s comfort. It’s argument. It’s nostalgia. It’s community.


And after more than 50 years behind the slicer, we’ve got a few thoughts.

My name is Lenny Daum, I was a sandwich maker from 1971 1975 with Shirlington Deli in Arlington Va and a second location on Gallows rd in Fairfax. They are no longer around since the mid 1980s. I also worked foe Celebrity deli in Rockville Md in 1976. i aso worked in a supermarket chain called Waldbaums in New York I ran the Deli dept. when I was just 19 years old in 1971.Isliced 10s of thousands of meat and cheese and thousands of lbs. of lox.
